Homemade Waffle & Pancake Recipe

Let's dive into the recipe that started it all. These waffles/pancakes are fluffy, flavorful, and just the right amount of sweet. They're a hit in my household, and I'm confident they'll be a favorite in yours too.


Ingredients


  • 2 Cups all-purpose flour (either below will work)

  • 2 Tablespoons of sugar (or honey)

  • 1 Tablespoon of baking powder

  • 1/2 teaspoon of salt

  • 1/2 teaspoon of cinnamon powder (optional)

  • 1 3/4 cups of whole milk (can also use skim milk)

  • 2 Large Eggs

  • 1 Teaspoon of Vanilla Extract (optional)

  • 1/3 Cup of OIL

Instructions

  • In a large bowl, mix the flour, sugar, baking powder, salt, and cinnamon.

  • In another bowl, beat the eggs with the milk and vanilla extract, then blend in the oil.

  • Pour the wet ingredients into the dry ingredients, stirring until just combined. Small lumps are okay.

  • Heat a waffle iron or a cast iron skillet over medium heat and coat with a little oil. Pour 1/4 cup of batter for each waffle/pancake, cooking until bubbles form on the surface, then flip and cook until golden brown.


*The optional cinnamon and vanilla add a lovely warmth and fragrance but feel free to customize to your taste.

DIY Shelf-Stable Waffle/Pancake Mix

For those mornings when even measuring ingredients feels like too much, this homemade waffle/pancake mix is a lifesaver. Plus, it's all-natural and can be stored for months.

Ingredients

  • 8 Cups All Purpose Flour

  • 1/2 Cup of Sugar

  • 1/4 Cup of Baking Powder

  • 2 Teaspoons of Salt

  • 2 Teaspoons of Cinnamon (Optional)


Instructions (Making Dry Mix)

  • In a large mixing bowl, whisk together all the ingredients until well combined.

  • Transfer the mix to a half-gallon Ball Mason jar or any airtight container.

  • Label your container with the date and instructions for making the waffles/pancakes.

  • 1 cup water

  • 1 cup sugar (or half honey/half sugar)

  • 1 tbsp maple flavoring or vanilla extract for a different twist


Boil the water and sugar together until the sugar is dissolved, then add the flavoring. Let it cool, and it's ready to serve!
